| $140The Food, Wine and Tourism Gateway Schools program is proud to partner with the Institute of Culinary Excellence and Alison Taafe, professional chef and award winning teacher of professional cookery.
Join us in a culinary hands on experience that you will want to take back and implement your new found skills in the classroom immediately.
9.00am Morning tea & tour of the facilities
9.30am Farm to table and environmental sustainability program (theory session)
11.30am Lunch
12-4pm Practical Session
After lunch you will then be taken on a journey of Traditional vs Contemporary Plating where you will cook and prepare dishes and learn from Alison on the different traditional and modern plating techniques. Learn how to make the same dish go from ‘old fashioned’ to 21st century contemporary, cool and modern.
This journey will also help with competition training and new techniques culinary judges are looking for. A certificate of currency with the standards affected will also be provided for this day for auditing purposes.
Alison Taafe is one of the founders and Directors of The ICE. Alison is a published cookbook author, made many appearances on TV and a dynamic passionate and motivated chef and teacher who spends her life constantly striving to share her vast knowledge of food.
*Please note that the cost listed is for registered Gateway Schools and includes morning tea and lunch. The cost for non Gateway Schools is $160pp (including morning tea and lunch).
